Crunchy and full of flavor with so many really healthy and yummy things mixed together.
1/3 c. Greek yogurt
2 tbsp. canned coconut milk
2 tbsp. honey, raw
1 tbsp. apple cider vinegar
1/3 c. homemade mayonnaise
3 3/4 c. broccoli
1/4 c. red onion
1/2 c. raisins
1/3 c. walnuts
3 pce. uncured bacon
Fry up your bacon and when cool, chop into pieces.
In a large bowl, combine chopped broccoli, chopped onion, raisins, chopped walnuts, and chopped bacon.
In a small bowl, combine mayonnaise, yogurt, coconut milk, honey, and vinegar.
Add mayonnaise mixture to broccoli mixture. Mix gently to combine.
Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.
Serves 6 (approximately 2/3 cup each)
