Broccoli and Meatball Quinoa Bowl

Everything you need for a satisfying lunch or dinner - all in one bowl!

Ingredients

    1/2 tsp. garlic powder

    1/2 c. white quinoa

    1 c. chicken broth

    2 tsp. avocado oil

    1 clove garlic

    1 c. broccoli

    sea salt & black pepper to taste

    1/2 lbs. ground chicken

    1 tsp. Italian seasoning

Directions

Preheat oven to 400ºF and line a baking sheet with parchment paper.

Combine ground chicken, Italian seasoning, and garlic powder in a bowl. Use hands to mix well and form 8 meatballs. Arrange on baking sheet, and bake for 15-20 minutes, until cooked through.

Meanwhile, combine quinoa and chicken broth in a saucepan. Cover, and bring to a boil. Reduce heat to medium low, and simmer for 10 minutes, until all liquid is absorbed.

While the quinoa is cooking, heat avocado oil in a skillet over medium heat. Add minced garlic and broccoli florets. Cook for 5-7 minutes, stirring occasionally. Season with sea salt and pepper.

Divide the quinoa between two bowls (or one bowl and one glass container, for leftovers). Top each bowl with 4 meatballs and half of the broccoli.
