Bright and Crunchy Salad

This is one of my favorite recipes to keep in the fridge and have ready to eat at any time. I normally pair this with a meat on the side. So colorful and SO delicious!!


    1 orange bell pepper

    1 med. red onion

    3 1/2 oz. corn, canned, organic

    1/2 c. dried cranberries

    1/4 c. sunflower seeds

    1/2 c. mozzarella cheese

    3 tbsp. coconut oil

    14 1/2 oz. canned black beans

    2 tbsp. coconut oil

    1 avocado

    2 tbsp. apple cider vinegar

    1 med. red bell pepper

    1/2 med. yellow bell pepper


Add all ingredients in a bowl and mix. If you are going to prepare for a group, add the avocado in with the whole mix. If you are making it to last a few days, I recommend adding avocado to each serving.
