An easy way to make a frittata for one.
2 egg
1 c. spinach
1 c. white mushrooms
sea salt to taste
Gently grease a fry pan with a little coconut oil. Saute spinach with mushrooms until tender. Meanwhile, break eggs into a small bowl and beat gently with a fork. I add just a bit of water to make the eggs a little more fluffy. Add a small amount of salt to the eggs, if desired. Add the eggs to the pan with the vegetables and cook, stirring frequently over medium heat until eggs are cooked through. Serve immediately.
You can use the vegetables listed, or substitute your own choices. If you need more protein, add more eggs. You can adjust the ratios to suit your specific metabolism type.
