Who said salad is only for lunch or dinner? Try it for breakfast!
1 c. kale
1/2 c. tomato
Italian seasoning to taste
sea salt & black pepper to taste
2 egg
1 tsp. coconut oil
1 tsp. garlic
2 tbsp. yellow onion
2 tbsp. green bell pepper
1/4 c. broccoli
Heat coconut oil in a pan over medium heat. Add minced garlic, diced yellow onion, diced green pepper, and broccoli florets; sauté until veggies start to become tender. Add kale and chopped tomatoes. Season with Italian seasoning, sea salt, and pepper. Sauté until kale starts to become tender. Push the veggie mixture to one side of the pan. On the other side, cook the eggs over easy. Serve the eggs over the vegetable “salad.”
