Breakfast Biscuits

Buttery breakfast biscuits packed with a dose of healthy protein? Yes, please! Pair with 2 slices of bacon or your favorite egg scramble with cheese.


    1 c. almond flour

    1/2 c. tapioca flour

    1/4 c. coconut flour

    1/2 tsp. baking soda

    1/2 tsp. baking powder

    sea salt to taste

    4 egg white

    2 egg

    2 tbsp. coconut oil

    1 tbsp. butter


Preheat oven to 350ºF.

In a medium bowl, combine dry ingredients. Froth egg whites and fold into dry ingredients. Add 2 whole eggs and melted coconut oil. Mix well.

Cover bowl with plastic wrap and refrigerate batter for 30 minutes.

Scoop 4-8 even balls of dough onto a baking sheet lined with parchment paper. Brush tops of raw biscuits with melted butter. Bake for 15-18 minutes or until a toothpick inserted to the center comes out clean.
