This is a breakfast bake I created. I freeze part and enjoy on a piece of SWG bread or in a SWG small tortilla.
12 pce. uncured bacon
12 egg
24 oz. Greek yogurt
7 fresh basil
1/2 c. onion
1/2 c. green bell pepper
8 grape tomatoes
sea salt to taste
black pepper to taste
6 c. canned black beans
Preheat oven to 350°F. Place basil, bacon, diced green pepper, diced onion, and grape tomatoes in food processor and chop/dice. Mix above mixture with eggs, Greek yogurt, and black beans (drained and rinsed). Place in baking dish and cook for 30-45 minutes.
