My family calls it the Brazilian Dish. Its simple, easy, quick, healthy and tasty. I'm not sure about the protein, carb or fat count. But the chicken and beans give some protein and carbs from the rice and tomatoes. One of my favorite dishes!
1 c. black beans, cooked or canned, organic
1 c. brown rice
1 green onion
2 chicken breast
1 c. tomato
1 c. salsa verde
First cook the brown rice and black beans as you normally would. Cook the chicken with little to no seasoning. I usually just put them in a skillet with a little chicken broth to keep them tender and add some chopped green onions and garlic for flavor. You can change this however you would like. Chop up chicken after it’s cooked. Layer the brown rice on bottom, black beans next, chicken, tomatoes, chopped green onions and at last put the salsa on top. A quick easy and tasty meal.
