Crisp and fluffy!
1/2 c. canned coconut milk
1/2 c. spelt flour
2 tbsp. coconut sugar
1/2 tsp. baking powder
1 dsh. cinnamon
1/4 tsp. sea salt
1 egg
1 tbsp. butter
1/4 c. frozen blueberries
Preheat waffle iron to medium heat. In a small bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In a separate small bowl, whisk together the egg, milk, and butter. Stir the egg mixture into the flour mixture and whisk until no flour pockets remain. Fold in the blueberries. Pour the batter evenly onto the waffle iron and cook until browned, about 5 minutes. Remove from iron and transfer to iron rack. Allow all excess steam to escape. Serve.
