This is the perfect vegan strawberry or blueberry cream cheese! This recipe can be used as a spread for your Ezekiel muffins, toast or bread. It can also be used as a dip for fruit or as an icing. Try switching up the berry to create different flavors. Here are a few fruits I love using in this recipe: Mango Raspberry Blackberry Orange Peach Pineapple Really, the options are unlimited.
1 1/4 berries
1/2 c. coconut oil
1/4 tsp. sea salt
3 stevia packet
1 tsp. lemon juice
1 tsp. vanilla extract
1/2 c. cashew butter
Place all ingredients in a food processor and blend until smooth.
Store in the refrigerator or serve immediately. Use as you would any cream cheese, nut butter, or spread. Enjoy!
