I had a bunch of grapes and didn't know what to do with them so I made this up. It's the perfect topping for pork, poultry, or lamb or even on top of cheese and crackers
1 c. frozen blueberries
2 tbsp. red wine vinegar
1 tbsp. fresh ginger
1 tsp. fresh rosemary
1 pinch stevia
sea salt & black pepper to taste
3 c. red grapes
In a large skillet, combine blueberries, grapes, stevia, ginger, rosemary, and vinegar. Bring to a boil; reduce heat, and simmer gently until grapes begin to break down, which takes about 20-25 minutes.
Remove from heat and add in salt and pepper. You can serve this over some seared pork chops, coat poultry with is and bake it in the oven or let it cool in the fridge and use it as a relish or jam... it tastes great with cream cheese or port de sault (any kind of soft cheese) on top of a cracker.
