Packed with Omega-3, antioxidants, and fiber, chia seeds provide nourishment, crunch, and a delicate coconut flavor in these yummy blueberry muffins!
1 1/2 c. brown rice flour
2 tsp. baking powder
1/8 tsp. sea salt
1/4 c. coconut oil
1/2 c. milk, raw or organic
1/4 c. honey, raw
1/4 c. chia seeds
1 egg
1 c. blueberries
Preheat oven to 400ºF. Grease a muffin tin with coconut oil.
Whisk together egg, coconut oil, milk, and honey. Add flour, baking powder, and salt; stir just until moistened (should be lumpy). Stir in blueberries and chia seeds.
Fill muffin cups 2/3 full and bake 20-25 minutes or until golden brown.
