Blueberry Chia Seed Jam

This is a super easy recipe for jam that has no added sugar but tastes great on your toast, oatmeal or whatever you chose to spread it on.


    1 tbsp. chia seeds

    1 c. frozen blueberries


Let berries thaw (or start with fresh berries), then mash them with either a fork or a handheld blender until smooth (about 5-10 seconds). Stir in chia seeds. Let sit for about 20-30 minutes. The chia seeds will thicken the fruit. If you want it thicker, add more chia seeds. If you want it thinner, add more fruit.

This will be as sweet as the berries you use. If you want it sweeter, you can add some stevia to taste. I find if I have good quality berries, no sweetener is required.

Makes about 8 tablespoons of jam. If you want a larger batch, just double, triple, etc. the recipe. Can be refrigerated for a short time.
