Blueberry Breakfast Popsicles

My kids enjoy these along with some eggs for breakfast.

Ingredients

    1 1/2 c. canned coconut milk

    1 c. frozen blueberries

    1 banana

    2 tbsp. gelatin

    1 avocado

Directions

Put all ingredients into a blender and blend until smooth. Pour into popsicle molds and place in the freezer for a minimum of 6 hours. My kids enjoy these along with some eggs for breakfast or after dinner.

Each popsicle has about .5 carbs and .5 fat. As a Protein Type, each popsicle could be counted as 1 carb.
