Healthy muffin to have with eggs in the morning. Excellent with almond butter, too!
1/4 c. honey, raw
3 tbsp. extra virgin olive oil
2 egg
2 med. banana
3/4 tsp. baking soda
2 1/2 c. almond flour
1/2 tsp. sea salt
1 c. blueberries
Preheat oven to 310ºF. Grease or line a muffin tin. Whisk the honey, olive oil, eggs, and bananas in one bowl. In another bowl, stir together the baking soda, almond flour, and sea salt. Add dry ingredients to wet ingredients, and mix well. Stir in blueberries. Divide batter into 12 muffin cups. Bake for 30 minutes, until toothpick inserted in center comes out clean.
