Blue Cheese & Chicken Open Faced Sandwich

This is a to die for recipe! :-) Really it's just so yummy and delicious. My kids aren't huge fans of blue cheese and even they gave it thumbs up. Hubby & Kid tested and loved! :)

Ingredients

    8 slc. sprouted whole grain bread

    1 lbs. white mushrooms

    1 lrg. sweet onion

    1 tsp. coconut oil

    1 c. Unknown (0)

    1/2 c. blue cheese

    1/4 tsp. black pepper

    sea salt to taste

    1 lbs. chicken breast

    1 c. mozzarella cheese

Directions

I grilled the chicken breasts outside on the grill but they could easily be baked or you could saute them with a bit of coconut oil in a pan for a few minutes on each side. Then slice them up.

In a large skillet add a bit of coconut oil and saute mushrooms and onions for 15-20 minutes or until onions are tender and golden brown (and they smell So good!); set aside.

In a small bowl, combine mayonnaise, blue cheese and pepper and salt if desired; mix well.

Spread blue cheese/mayo mixture over each bread slice. Top with chicken, mushroom and onion mixture and mozzarella cheese. Place on a broiler pan. Broil 4-6 inches from the heat for 3-4 minutes or until the cheese is melted. Watch carefully!

This will serve 8, but you don't have to make all 8 be sandwiches. It would be just as good on lettuce. Just heat your little mound of chicken/veggies/mayo mixture and mozzarella in a small dish that can go under the broiler. Then serve over lettuce or however you'd like. Really so yummy and my new 'treat' for the week!
