AMAZING dish full of flavor! So quick and easy to make, and the kids LOVE these!
1/2 c. fresh basil
2 med. zucchini
3/4 c. shredded cheese
1 c. grape tomatoes
2 turkey bacon
3 green onion
sea salt & black pepper to taste
Pre heat oven to 400 degrees
Cut Zucchini in half lengthwise and scoop out seeds with a spoon and discard the seeds.
in a mixing bowl combine the shredded cheese,tomatoes, crumbled turkey bacon, green onions, and salt and pepper.
Line a baking sheet with foil, and place Zucchini "boat side up"
Fill each boat with cheese mixture and bake in the oven for 15-20 mins or until zucchini is tender crisp and cheese is golden brown.
Remove from oven, garnish with basil and serve immediately
