This is what I make on the mornings when I crave a BLT but don't need the bread and mayo. Easy way to incorporate a vegetable into the morning.
2 plum tomatoes
2 slc. uncured bacon
1/2 avocado
2 lettuce
As bacon is cooking, slice tomatoes, lettuce and avocado. Assemble on plate with lettuce slice as the base topped with the other ingredients. ( I want to try mashing the avocado first to hold it together better) Wrap these in a strip of lettuce and fasten with a toothpick.
