Wonerful side dish.
3 shallots
1/3 c. apple cider vinegar
1/4 c. water
1 tsp. stevia
1 1/2 tsp. sea salt
5 slc. uncured bacon
2 tbsp. extra virgin olive oil
2 lbs. green beans
1/2 tsp. black pepper
5 garlic
2 jalapeno pepper
Pickle shallots in small saucepan by bring vinegar, water, stevia, shallots and half the sea salt to a simmer. Remove from heat and let stand.
In a very large skillet cook bacon over medium heat for 7 min. until crisp. Move to paper towels to drain, leaving fat in skillet. Add beans and olive oil to skillet and increase heat to high. Add remaining salt and black pepper. Cook about 9 min until beans are blistered. Stir in garlic and jalapeno and cook for 2 min.
Transfer beans to platter and top with bacon and drained pickled shallots.
