Black Bean Quinoa Burgers

This delicious vegetarian burger is the result of experimenting in the kitchen. I think they turned out pretty darn good!

Ingredients

    1 c. quinoa flakes

    15 1/2 oz. canned black beans

    2 egg

    1 roasted red pepper

    2 tbsp. hummus, organic

    2 stlk. celery

    1 tsp. ground cumin

    garlic to taste

    sea salt to taste

Directions

In a food processor, blend together quinoa flakes, half of the can of black beans (drained and rinsed), the roasted red pepper, hummus, eggs, celery, cumin, minced garlic, and salt.

Add the remaining black beans and stir by hand for added texture.

Form mixture into 4 patties, and cook in a skillet over medium heat for about 10 minutes.

*Note: You will have to work at keeping the burger together as it cooks due to the nature of quinoa flakes.
