These are sort of like a tex-mex version of falafel.
1/4 c. cilantro, bunch, fresh, organic
2 tsp. ground cumin
1 tsp. sea salt
1 avocado
2 sprouted whole grain pita bread
1 tbsp. coconut oil
1 c. canned black beans
1 slc. sprouted whole grain bread
1 egg
Mash the blackbeans until they are slightly chunky. Combine beans with next 5 ingredients. Form into 4 equal patties. Heat coconut oil in large nonstick pan. Add patties and cook each for 5 minutes per side or until lightly browned. Meanwhile spread the inside of each pita with mashed avacado**. Let patties cool for a minute or two, then stuff inside pita. Enjoy!
*For my kids I also stuf the pita with lettuce and tomato. **You can also up your protein by using sliced avacado instead of mashed and spreading the inside of the pita with dill sauce: combine 1 small container plain greek yogurt with 2 tbsp. dill and 1/2 tsp cayenne pepper.
