Gluten-free brownies made with black beans!
3/4 c. black beans, cooked or canned, organic
1/2 c. coconut oil
2 egg
1/4 c. cacao powder
2/3 c. honey, raw
1 tsp. coffee grounds
1 tsp. vanilla extract
1/2 c. chocolate chips
1/3 c. oat flour
1/2 tsp. baking powder
1/2 tsp. sea salt
1 oz. walnuts
Preheat oven to 350°F. Grease 9x9-inch square baking pan.
In a blender, puree the beans with the coconut oil.
In a mixer, combine the pureed beans, eggs, cacao powder, honey, coffee, and vanilla. Melt one half of the chocolate chips and add to the mixer. Mix on medium high until smooth.
In a small bowl, whisk together the flour, baking powder, and sea salt. Add to the mixer and mix just to incorporate the flour. Scrape the bowl as needed. Add the remaining chocolate chips and stir by hand. The mixture will be thick.
Pour mixture in the baking dish and use a spatula to spread it out. Bake for 20 minutes. Brownies will be browned around the edges.
Remove from the oven and place the walnut halves in the center of each brownie (do not cut at this point, just visualize the center of each brownie) - 4 rows of 4 walnuts.
Let cool for 15 minutes, then cut into squares.
