Black Bean and Tomatoes

This is a great for an afternoon snack or lunch.


    15 oz. canned black beans

    1 med. tomato

    1 tsp. extra virgin olive oil

    1 tbsp. cilantro

    2 tbsp. lime juice

    1 tbsp. red onion


Drain and rinse beans. Chop tomato, onion, and cilantro. Gently mix all the ingredients.

This travels well in a lunch box. This is good chilled, but is ready to eat right away.
