Bircher muesli is a treat I always eat at a hotel but never think to make at home. It is a great balance of carb & protein and allows you to have cereal for breakfast, so this recipe is for all those cereal lovers.
1 c. oats, whole, dry, organic
4 apricot, unsulfured, unsweetened, organic
1/4 c. raisins
1 red apple
6 oz. yogurt
2 oz. mixed nuts
4 oz. Greek yogurt
1/2 c. milk, raw or organic
Rough chop the nuts and apricots - I leave mine fairly large to give the dish texture. Then, mix all the ingredients together in a bowl.
You can eat straight away, but better if you leave over night in the fridge. You will find it slightly drier in the morning so when you take out your portion, you may want to add a little milk to loosen it.
I make this up at the beginning of the week and it will serve me for 6 mornings. Especially good if you're in a hurry. You might want to drizzle a little honey but I find it sweet enough. It's also delicious if you add a few berries but don't forget to count them extra.
It can make 6 small servings or 3 large (just double up on the protein and carb count)
