Looking for a special fish dish? This is it.
1 tsp. garlic powder
4 cod
1/3 c. coconut oil
1 c. almond meal
2 egg
sea salt to taste
1 lbs. shrimp
Heat oven to 350
Dry the fish slightly on paper towels, dip in egg, then cover both sides in Almond Meal.
Melt coconut oil in large fry pan, add fish, pan fry about 3 mins each side to set Almond Meal
Transfer to Oven and bake approx. 20 mins.
While fish is baking. Stir-fry shrimp in coconut oil, 1 clove garlic, 2 tbs.parsley, 1 tsp sea salt.
When fish is done, top with shrimp and serve. Great with stir fried veggies or a garden salad.
