Best Beet Pickles

These tasty pickles are a great way to take advantage of an abundant harvest. Quick and easy!


    9 beets

    2 c. apple cider vinegar

    1 c. honey, raw

    1/4 tsp. nutmeg

    3/4 tsp. ground cloves


Remove tops and stems from well scrubbed beets. Boil, for approximately 1 hour, in just enough fresh water to cover. Save the beet water. When the beets are cooked, plunge them into ice water so the skins slip off easily. Remove the skins and slice or cube the beets. Put 3 cups of the beet water into a non oxidizing pot along with the vinegar, honey, and spices. By the way, I like whole cloves but they are not on the list! Bring this pickling mixture to a boil until the honey has dissolved then add the sliced beets to the pot. Bring back to a boil. Pack into two 1-quart mason jars. Fill with pickling mixture to within .25 inches of top. Secure lids firmly and set on a cutting board to cool. Within about 2 hours the lids should snap! No need for canning kettle here! The boiling liquid does the trick! You should get 2 jars of approximately 8 servings each. This will equal half a carb per serving! Enjoy.
