Beef Picadillo

Serve in tortillas, over rice or quinoa, or as-is.


    1/2 c. tomato sauce

    1 tbsp. coconut oil

    1/4 c. onion

    1 tbsp. garlic

    1/2 med. green bell pepper

    1/2 med. red bell pepper

    1/2 lbs. ground beef

    1/4 tsp. garlic powder

    1/2 tsp. red pepper flakes

    1/2 tsp. ground cumin

    1/8 tsp. sea salt

    1/4 tsp. black pepper


Heat coconut oil over medium heat. Sauté onions, garlic, green and red peppers for 3-4 minutes until softened. Add ground beef and cook, breaking it up as it cooks, until browned. Season mixture with garlic powder, red pepper flakes, cumin, sea salt, and black pepper. When the ground beef is fully cooked through, add tomato sauce and stir to mix well. Let simmer for 2-3 minutes.
