Beef Minestrone Soup

Delicious, filling, and healthy soup! My family gave this meal a '10' on the scale of yummy!

Ingredients

    1 lbs. ground beef

    1 c. onion

    6 c. water

    1 c. white or gold potatoes

    1 c. tomato

    1 c. cabbage

    1 c. carrot

    1/2 c. celery

    1/4 c. long grain wild rice

    1/2 tsp. dried thyme

    1 bay leaf

    1/4 tsp. black pepper

    sea salt to taste

    5 tsp. parmesan cheese

Directions

In a large heavy pan, cook ground beef and chopped onions over medium heat until meat is no longer pink and onion is tender; drain off any fat. Add the water, peeled and cubed potatoes, chopped tomatoes, shredded cabbage, chopped carrots, chopped celery, wild rice, dried thyme, bay leaf, pepper, and sea salt; bring to a boil. Reduce the heat; cover and simmer for 1 hour.

Discard bay leaf. Sprinkle each serving with 1/2 teaspoon of Parmesan cheese. You can omit the cheese if you'd like or add a different cheese or any other topping you desire.

Makes 10 servings of 1 cup each.
