Peppers stuffed with ground beef and roasted cauliflower.
3 med. bell pepper, any color
1 c. cauliflower
1 lbs. ground beef
1 c. onion
1 c. tomato sauce
1 tsp. sea salt
1 tbsp. extra virgin olive oil
Preheat oven to 400ºF. Chop the cauliflower and mix with olive oil. Arrange on a baking sheet, and roast until brown.
Meanwhile, cut peppers in half and clean out seeds and ribs.
In a large bowl, mix raw ground beef, chopped or diced onions, roasted cauliflower, tomato sauce, and sea salt. Divide mixture evenly between pepper halves. Place peppers in a 13x9 baking dish, cover with foil, and bake for about 40 minutes, until beef is cooked.
