Butternut squash pairs well with beef!
1 tbsp. coconut oil
1/2 med. onion
2 clove garlic
1/2 tsp. sea salt
1/4 tsp. black pepper
1 pinch nutmeg
1 tbsp. water
1/2 lbs. ground beef
2 c. butternut squash
Heat coconut oil in a skillet over medium heat. Add diced onion and cook for about 5 minutes, until onions start to brown. Add minced garlic, spices, water, and ground beef. Mix well, and continue to cook, breaking the ground beef up as it cooks. When the ground beef starts to brown, add the peeled and cubed butternut squash. Mix well. Reduce heat to medium-low, cover skillet, and cook for 10 minutes, until squash is cooked through.
