Veggie-packed chili... with no beans!
1 lbs. ground beef
2 tbsp. taco seasoning
1/2 tsp. garlic powder
1/2 tsp. sea salt
14 1/2 oz. diced tomatoes, canned
1/2 c. water
1 c. cauliflower
1 med. zucchini
Brown ground beef in a large skillet over medium-high heat. Season with taco seasoning, garlic powder, and sea salt. Add diced tomatoes (with liquid) and water to the skillet. Stir everything together. Add chopped cauliflower and zucchini to the skillet. Bring mixture to a boil, reduce heat to medium-low, cover, and simmer for 30 minutes.
