BD Free Paleo Coconut Popsicles

Burn more fat with cool and creamy pops that can actually boost your metabolism due to their high concentration of medium chain triglycerides (MCTs). This recipe is BD "free" if you omit the gelatin! The shredded coconut gives them a bit of a grainy texture, yet still very delicious!

Ingredients

    30 drp. liquid stevia

    1 tbsp. vanilla extract

    2 tbsp. gelatin

    14 fl oz. canned coconut milk

    1 tbsp. shredded coconut

Directions

Add all ingredients to a medium bowl. Mix well. Pour into stainless steel popsicle molds. Freeze for 5 hours, until solid.

Variations: Add frozen organic blueberries or raspberries or kiwi slices to pops. Or, once frozen, dip popsicles in melted 85% dark chocolate and sprinkle with toasted coconut.

My variation: Chocolate and double chocolate. Pour some of the mixture into a small separate bowl/pourable measuring cup, stir in some organic extra dark cocoa powder, tasting as you go for personal preference (the amount used will depend on the number you make). For double chocolate, drizzle or cover in melted dark chocolate, I use 90% cacao solids. Depending on amount of chocolate you drizzle or spread over top, you'll have to count a portion of fat.

NOTE: Number of servings will depend on size of popsicle mold and add-ins, if used. Taste as you stir, using vanilla and stevia to your liking!
