Grilled salmon in a pouch, great for camping!
4 salmon
2 med. tomato
1 sml. onion
2 tbsp. garlic
1/2 cilantro, bunch, fresh, organic
1/2 c. apple cider vinegar
8 tbsp. ketchup
1 1/2 tbsp. coconut sugar
1/2 tbsp. yellow mustard
1/2 tsp. sea salt
1/4 tsp. red pepper flakes
1/2 tbsp. honey, raw
Mix the finely chopped cilantro, tomatoes, onion, and garlic in a bowl. Slowly add your BBQ sauce until the mixture looks "saucy," about 1/2 - 1 cup or as you like. Lightly oil 4 sheets of aluminum foil and place individual salmon fillets on them. Top with 1/4 of the sauce mixture for each fillet and tightly roll/seal the aluminum foil into a pouch. Repeat for all fillets and grill on medium heat for about 20 minutes.
Directions for BBQ Sauce: Combine apple cider vinegar, ketchup, coconut sugar, mustard, salt, red pepper flakes, and honey. Mix well. That's it!
