Basic Veggie Soup

This is a basic veggie soup that you can add protien, carbs, fat or spices to as you like and count each as added. I like to make it and then put it in the freezer in indiviual glass containers. My favorite add ins are shrimp, avo and cilantro or green onion with a quarter of a lime squeezed on top. My children love this reciepe. The picture shows chicken, cilantro and avo added.

Ingredients

    12 c. chicken broth

    2 c. onion

    1 can diced tomatoes, canned

    2 c. zucchini

    1 canned black beans

    3 clove garlic

    2 tbsp. ground cumin

    2 tbsp. fresh oregano

    2 c. fresh made salsa

    sea salt to taste

    1 c. carrot

Directions

I make the organic chicken broth ahead and have it in the freezer . To defat the broth let it stand in the frig over night and then spoon the fat off the top the next day. I have made this reciepe with vegetable broth and it is still quite good. I like to add my fat in the form of avocado to this soup, but you could lightly saute the onions and garlic in a little olive oil first and then just add the fat portion to the serving amounts. Place the chicken broth in a large soup pan, add veggies, beans, spices. Simmer for 30 minutes then add the salsa. Taste and add salt as needed. Simmer a few more minutes to let flavors combine, serve or freeze.
