Banana Walnut Pancakes

Banana pancakes the whole family will love!


    2 egg

    1/4 c. coconut flour

    2 tsp. honey, raw

    1/3 c. canned coconut milk

    2 tsp. vanilla extract

    1 tsp. baking soda

    1/2 sml. banana

    1/2 oz. walnuts

    1 tsp. coconut oil

    1 tsp. maple syrup


Whisk together eggs, coconut flour, honey, coconut milk, vanilla, and baking soda in a medium bowl. Add mashed banana and chopped walnuts and combine thoroughly.

Heat a skillet or griddle over medium heat and add coconut oil once hot. Pour about 4 spoonfuls of pancake batter onto skillet or griddle, making at least 4 small pancakes. Let the pancakes cook for about 1-2 minutes on each side.

Serve warm topped with banana slices (optional) and maple syrup.

*Make each pancake about 3” in diameter. If they are too thick or too large, they will be more difficult to flip. Be patient when it comes to flipping, don’t turn up the heat or the pancakes will burn.
