Banana Walnut Breakfast Quinoa

Delicious gluten-free, egg-free breakfast!

Ingredients

    1/4 c. white quinoa

    1/4 c. water

    1/4 c. almond milk

    1 tbsp. honey, raw

    1 tsp. cinnamon

    1/4 tsp. vanilla extract

    1 med. banana

    1 oz. walnuts

Directions

Combine quinoa, water, and almond milk in a medium saucepan. Bring to a boil. Cover and reduce heat. Simmer for 10-15 minutes, until all liquid has been absorbed. Remove from heat. Stir in honey, vanilla, and cinnamon. Divide between two bowls, and serve topped with banana slices and walnut pieces.
