Very light and "airy," and I think pretty good!
2 egg
2 1/2 med. banana
1/2 c. steel cut oats
2 tsp. honey, raw
1/2 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. coconut oil
In a food processor, puree oatmeal. Add all ingredients. Pour batter into a muffin tin, or an 8.5 x 8.5 baking pan, greased with coconut oil. Bake at 350°F for 20 minutes. The serving size depends on how you cut the squares. I cut 8 squares but I think anyone would want to eat 2, making the above carb, protein, and fat ratios.
*I also tried this recipe with a cup of blueberries instead of banana. This version was also delicious...options are good!
