A delicious gluten-free bread - great for a snack or for breakfast!
3 c. almond flour
2 tsp. baking soda
1/2 tsp. sea salt
1/4 c. coconut oil
4 egg
2 med. banana
3 tsp. vanilla extract
3 tsp. cinnamon
1/2 c. walnuts
Preheat oven to 350ºF, and grease a loaf pan. In a bowl, combine almond flour, baking soda, and salt. Mix together the coconut oil and eggs in another bowl. Stir the flour combination into the oil and eggs. Mix well until blended. Add the mashed bananas, vanilla, and cinnamon to the mix. Fold in walnuts. Pour the batter into the loaf pan. Bake for 25-30 minutes.
