A light and fluffy muffin that's perfect for breakfast or a snack.
1/2 tsp. vanilla extract
1 lrg. banana
1/4 c. milk, raw or organic
1/4 tsp. cinnamon
1/4 c. chocolate chips
3/4 c. spelt flour
1/2 tsp. baking soda
1/4 tsp. sea salt
1/4 c. coconut oil
1/4 c. coconut sugar
1 egg
Preheat oven to 350°F. Line 8 cups of a muffin tin with paper liners.
Combine flour, baking soda, and sea salt in a small bowl and set aside. Whisk together coconut oil and coconut sugar in a mixing bowl until well combined. Add the egg, and mix well. Add vanilla, mashed banana, milk, and cinnamon; mix well. Add flour mixture to wet mixture, mixing until just incorporated (do not over mix - batter will be thick). Fill each muffin cup about 2/3 full with batter and sprinkle with chopped walnuts or chocolate chips. Bake for 15-18 minutes, until a toothpick inserted in the center comes out clean.
