I converted this recipe from an old cookbook in my cupboard craving a tasty breakfast muffin but without the guilt! I thought these turned out great and wanted to share this healthy banana muffin!
1 lrg. banana
1 egg
2 tbsp. honey, raw
1/4 c. almond milk
1/4 c. coconut oil
1 tsp. vanilla extract
1 c. almond flour
1 c. old-fashioned oats
1 1/4 tsp. baking powder
1 tsp. baking soda
3/4 tsp. sea salt
1/2 c. chocolate chips
Preheat oven to 400°F. Puree banana in blender (2/3 cup). In medium bowl, combine pureed banana, egg, honey, almond milk, melted coconut oil and vanilla. In large bowl, combine flour, oats, baking powder, baking soda and salt. Stir banana mixture into dry ingredients with chocolate chips until just blended. Spoon into well-greased 2 1/2 inch muffin cups. Bake 12-15 mins. Remove from pan. Enjoy!
