A BD twist on an old favorite!
3 banana
2 egg
1 1/4 c. oat flour
1 tsp. baking soda
1/2 c. honey, raw
1/2 c. butter
Preheat oven to 350ºF. Line a muffin tin with paper liners.
Mash the bananas in a bowl. Add eggs, raw honey, and melted butter; mix until combined well. In another bowl, mix flour with baking soda. Combine wet and dry ingredients, mix well, until you have a smooth batter.
Fill muffin cups about 3/4 full of batter. Place in the oven, and bake for 20-25 minutes. Check if done with a toothpick inserted in the center of a muffin. If it comes out clean, they are done.
If you want to make a banana bread, use the same ingredients, but pour the batter into a greased loaf pan, and bake at 350ºF for 1 hour. You can check the center if they're done at the 50 minute mark, but I find that it needs the full hour.
