Banana Almond Butter Ice Cream

3 ingredient dairy-free ice cream. Great for summer afternoon snacks!


    3 med. frozen banana

    3 tbsp. almond butter

    1 tbsp. vanilla extract


Cut bananas into coins and freeze for at least 2 hours (overnight is best). When bananas are frozen, combine with almond butter and vanilla extract in food processor and blend. It will start to look crumbly - scrape it down and keep blending. Do this until it becomes slightly white and smooth, like ice cream. Be careful not to over-blend! Scoop out and enjoy.
