Balsamic Turkey Cutlets

Delicious quick to make dinner. Just add a side dish and you're ready to go. Hubby and kid tested and loved! :)

Ingredients

    1 tbsp. coconut oil

    1 med. onion

    1 lrg. red bell pepper

    1/3 c. balsamic vinegar

    1 lbs. turkey breast cutlet, free-range, organic

    1/2 tsp. sea salt

    1/4 tsp. black pepper

    1/4 tsp. garlic powder

Directions

Combine salt, pepper & garlic powder in a small dish. Coat both sides of the turkey cutlets with spice mixture. Melt oil in skillet and place over medium high heat. Once hot, add turkey and cook about 2 minutes on each side or until lightly browned and cooked through. Transfer the cooked turkey to a serving platter, cover with foil to keep warm.

Add the onion and bell pepper to pan, and saute 3 minutes or until crisp-tender. Remove onions and peppers from pan and place on top of turkey cutlets. Cover with foil again. Add vinegar to pan and cook for 2 minutes or until slightly reduced. Spoon sauce over cutlets. Serve and enjoy. :)
