Healthy comfort food!
2 tsp. Italian seasoning
1/2 c. parmesan cheese
1 med. spaghetti squash
1 lbs. ground turkey
25 1/2 oz. tomato sauce
1/4 c. Greek yogurt
1 clove garlic
Preheat oven to 400ºF. Line a baking sheet with parchment paper.
Cut the spaghetti squash in half and place flesh side down on the baking sheet. Bake for about 30 minutes, remove from oven, and let cool to the touch.
Reduce heat to 350ºF.
Brown ground turkey in a skillet, breaking it up as it cooks. When cooked through, add tomato sauce to the skillet.
When spaghetti squash has cooled, use a fork to scrape out the flesh into spaghetti-like strands. Move “spaghetti” to a bowl. Add Greek yogurt, minced garlic, and Italian seasoning. Stir until well combined.
Spread a small amount of meat sauce in the bottom of a 9x13 baking dish. Spread spaghetti squash on top. Top with meat sauce, and sprinkle Parmesan cheese over it all. Bake for 30 minutes.
