Baked Salmon and Roasted Veggies

Salmon and veggies - a simple, nutritious dish.


    4 oz. salmon

    2 tsp. extra virgin olive oil

    1/2 c. white mushrooms

    1/2 med. zucchini

    1/2 med. yellow squash

    sea salt & black pepper to taste

    1 tsp. dried oregano

    2 clove garlic


Preheat oven to 400ºF. Line a baking sheet with parchment paper.

Place salmon on the baking sheet. Brush on half of the olive oil. Season with sea salt, pepper, and half of the minced garlic.

Slice mushrooms, zucchini, and yellow squash. Arrange vegetables on the baking sheet, and drizzle with olive oil. Sprinkle with sea salt, pepper, oregano and the remaining minced garlic.

Bake for 20-25 minutes, until the salmon is cooked through.
