Fresh peas will also work just fine!
1 lbs. frozen baby peas
1/2 c. fresh tarragon
2 green onion
2 tbsp. extra virgin olive oil
1/4 c. Greek yogurt
1/2 c. pistachios, raw, organic
sea salt to taste
Preheat the oven to 500°F.
Put the peas in a clay pot or a small Dutch oven and gently heat them on the stove until they thaw, stirring occasionally.
Meanwhile, put the tarragon, scallions, olive oil, Greek yogurt, and 1/4 cup of the pistachios into a blender/food processor and puree.
Remove and gently add the mixture to the peas. Season with salt. Sprinkle the remaining pistachios on top and bake for about 15 minutes (the top should just begin to brown). Enjoy!
