This recipe is great for just one person, and I can easily be doubled/tripled to serve more. It's also great because the vegetable are interchangeable. Want peppers? Add peppers!
4 cod
1 c. white mushrooms
1 med. onion
2 tsp. butter
2 tbsp. sprouted whole wheat flour
1 c. milk, raw or organic
1 garlic
3 tbsp. water
paprika to taste
Sauté the mushrooms and onions in the water with the garlic for about 3 minutes. In a saucepan, melt the butter and mix in the flour. Add the vegetables and the milk and bring to a boil, stirring constantly. Pour into a baking pan and add the fish. Season with paprika and pepper, or whatever seasonings you want. Bake at 350 degrees F for 30-35 minutes. Goes best with rice.
