This is a delicious breakfast and a great way to add arugula to your breakfast. Depending on your metabolism, eat 1 or 2 or add turkey bacon for extra protein
4 egg
1 c. arugula
1 clove garlic
1 tbsp. extra virgin olive oil
1 fresh chives
2 oz. shredded cheese
sea salt & black pepper to taste
Preheat oven to 350 degrees.
Put 1 cup of arugula in a small bowl, add minced garlic and olive oil and toss. Put a bed of arugula in the bottom of 4 ramekins.
Crack 1 egg over the arugula, topped with raw cheese, chives, salt and pepper to taste. Bake 12 to 14 mins in a 350 degree oven. Take out and let rest for 3 to 5 mins. This is easy and delicious!
