My family loves this savory chicken dish. Its pretty simple and is a one dish dinner. Add a tossed salad and whala! dinner is served. I use the cooking time to add in a work out.
4 chicken thighs or breast
1 clove garlic
1 tsp. fresh oregano
1 tsp. fresh basil
1 tsp. fresh rosemary
3 tbsp. extra virgin olive oil
1 lrg. sweet potato
sea salt & black pepper to taste
Remove skin from the chicken. In a bowl combine olive oil, sea salt, pepper, basil, oregano, rosemary, and chopped garlic. Toss the chicken in the garlic mixture and place in 13x9 baking dish. Peel and cut up sweet potato and toss in the bowl with the remaining oil and seasoning to coat. Layer over the chicken. Bake at 400ºF, turning once halfway through cooking. Bake for about 30-40 minutes or until chicken is cooked through.
