Baked Bacon and Egg Tomato Cups

Bacon and Egg inside a roasted tomato. The Flavor is so intense! The egg cooks all the way through, so if you love Boiled eggs, the recipe is for you!!!! My kids LOVED these!


    6 lrg. tomato

    2 tbsp. extra virgin olive oil

    sea salt & black pepper to taste

    1 tbsp. fresh thyme

    2 clove garlic

    6 lrg. egg

    1 oz. cheese, any type

    6 slc. turkey bacon


Heat oven to 400 degrees. Slice the top third off tomatoes and use a small spoon to remove core and seeds. Cover baking dish with foil. Arrange tomato cups in a baking dish, drizzle with oil, and season with salt and pepper. Sprinkle with thyme and garlic. Roast until tomatoes are tender and caramelized, about 30 minutes.

Line each tomato around the inside with a piece of turkey bacon which has been fully cooked in a skillet. Crack an egg into each tomato and season with salt and pepper. Bake until eggs are just set, 7 to 9 minutes more.

TIP: My tomatoes weren't very large, so to prevent the egg from spilling out over the top, I cracked the eggs over a cup and let a little bit of the egg whites fall into the cup before putting the rest of the egg in the tomato.
